I Made It!: Mexican Chicken

Another recipe from Sparkrecipes.com this week. But it's so fantastic I couldn't help but recommend it for anyone reading. It's quick, easy, and probably the least expensive way to spice up your chicken!

I Made It!: Mexican Chicken

Ingredients
1 package taco seasoning
4 (4 oz) boneless, skinless chicken breasts
1 cup salsa
1/4 cup reduced fat sour cream


Directions
1. Put chicken & taco seasoning in Ziploc bag; shake and coat well.
2. Place breast in casserole dish sprayed with nonstick cooking spray.
3. Bake in 375*F oven for 30 minutes.
4. Top with salsa 5 minutes before done.
5. Garnish with sour cream just before serving.

Yeah, it's that easy. I don't have a lot of extras to give about this one, becuase it's so simple, yet incredibly tasty.
However, there are a few ways you can alter it t your tastes. My boyfriend doesn't particularly like salsa, so he didn't top his the first time with it. And it still tasted wonderful. (However, he tried some with salsa, and the second time we made this, he had salsa on it.)
Also, we chose not to put sour cream on it. A simple way to cut a few more calories, right? If you don't like it, don't have it on there. If you do, though, go for it! This is still an incredibly low fat/low calorie entree.
